While we need rain very badly, it looks like today may turn out to be another good Farmer’s Market day in Peru…and while there is a threat of some weather in Greentown on Saturday, it probably will work out to be a good market morning there as well.
This week at Third Generation Farm we have harvested several bushels of green beans and have been busy canning. Yet, we have a lot left over to bring to the markets. I have several varieties because I like variety in beans. While I know most will only buy the Blue Lake because it is the bean they know...there are a few of you that will try the purple beans just for fun.

While I know most will only buy the Blue Lake because it is the bean they know...there are a few of you that will try the purple beans just for fun.
And those know just what to do with wax beans. This variety is from France and I like these better than the standard wax beans.
Oh yes, and my favorite, the Flat Italian Bean. These are the beans served in the better restaurants. They have a slightly nutty flavor and are as good boiled as they are steamed. They were all the rage a few years back and I have kept them on my list of favorites. So come by and try some of these favorite heirlooms from a few years back.
My family loves beans, we can eat them every day (sometimes twice) and often do during the summer weeks when they are plentiful. I love Asian-style beans and this is principally what we eat in the summer, they are fast and make good leftovers for quick meals. These are simply sautéed in some good oil with garlic, a slice of ginger root, and one hot pepper until they are tender…(or you can use garlic power/salt and a dash of ginger powder, and eliminate the hot pepper if that is not to your liking). At the table I drizzle just a touch of toasted sesame oil and soy sauce over the top. (One of my family members does not like toasted sesame.)

We are running a bit low on jams but we still have a few of all varieties. With the canning of green beans this week there has been little time for jam making.
I will have my mint tea blend. It has taken me awhile to get my mints dried but finally they are ready. If you have not tried my mint tea mix, consider it. I have had people tell me they don’t like mint tea drink my mix and realize they were missing out on something good. And to be really good, you haveto add a spoonful of honey. This is not only good but good for you. Mints are very strengthening to the body and local honey boosts your immune system…
And speaking of honey…hubby went yesterday to pick up a new batch of honey. Supplies have been low this summer and it has been hard to find local honey this year, so we are thankful to be able to provide it to you.
