Today is supposed to be a fabulous day for getting out and visiting us at the Farmers Market. So do plan to stop by and see all the vendors. We are slowly beginning to see produce be ready for the market. It will be another two or three weeks before we will have green beans to sell.

Beets can be peeled and eaten raw, shredded up into salads. If that does not appeal to you, cook them with the peels on and then peel them (this helps retain the color and flavor). Some people like them pickled. Also, do not throw the leaves away. I have one recipe where I cook the beets and then chop up and add the leaves. To that I squeeze on a bit of lemon juice, salt and pepper then serve it with a scoop of sour cream. Wow, this is good!

I will also have Spinach Swiss Chard. I particularly like this type of Chard because it has a vague spinach flavor. My favorite recipe for this vegetable type is to cook it with mushroom and onions in butter.
Also, if you are interested in free range meat chickens grown on grass and non-GMO feed, please contact us. It will be several weeks before they are ready for the market but knowing in advance gives us a time to plan for their delivery.
The grain-free/gluten-free offerings will be about the same as usual.
